A Recipe for Tomato Sauce

Making the perfect tomato sauce requires three things:

  1. Top-quality ingredients
  2. Care and attention to detail
  3. Endless patience

You will need a big splash of olive oil,

one finely chopped onion, several cloves of minced garlic,

a tin of chopped tomatoes, a tin of tomato puree,

a pinch of dried oregano, half a teaspoon of sugar, and salt and pepper.

Here's how to do it:

  1. Fry the garlic in the olive oil.
  2. Drop in the chopped onions.
  3. Continue to fry until onions are soft and have started to colour.
  4. Add both tins, the dried oregano, and the sugar.
  5. Lower the heat and cook for a very long time.
  6. Wait until most of the water has evaporated and the olive oil appears around the edge of the pan.
  7. Finish with salt and pepper to taste.

Enjoy on pasta or poured over sausages!
