A Recipe for Tomato Sauce
Making the perfect tomato sauce requires three things:
- Top-quality ingredients
- Care and attention to detail
- Endless patience
You will need a big splash of olive oil,
one finely chopped onion, several cloves of minced garlic,
a tin of chopped tomatoes, a tin of tomato puree,
a pinch of dried oregano, half a teaspoon of sugar, and salt and pepper.
Here's how to do it:
- Fry the garlic in the olive oil.
- Drop in the chopped onions.
- Continue to fry until onions are soft and have started to colour.
- Add both tins, the dried oregano, and the sugar.
- Lower the heat and cook for a very long time.
- Wait until most of the water has evaporated and the olive oil appears around the edge of the pan.
- Finish with salt and pepper to taste.
